I’ve been eyeing pickle soup ever since I saw it on Instagram when everyone was posting about their pickle obsession. I finally got around to making my first batch of lacto-fermented pickles last month and finally whipped up the soup. It came together quickly and has a nice balance of flavor, so I highly recommend adding it to your cooking repertoire for last minute meals and even meal prep! I brought leftovers to work for lunch!
